GOLD KIWI AND FETA SALAD

You can never go wrong with the freshness of the gold kiwis in this refreshing salad recipe.

Ingredients:

•  5 tablespoons extra-virgin olive oil

•  5 tablespoons freshly squeezed Catania lemon

•  3 tablespoons honey

•  1 garlic clove, finely grated

•  1/4 cup of tahini

•  1 red onion, peeled and finely diced

•  8 Catania Gold kiwis, chopped into chunks, skin removed

•  1 large cucumber, chopped into cubes

•  Feta cheese

•  1 handful of fresh dill, finely chopped

•  Salt and pepper to taste

Directions:

1. Start by making the dressing in a large serving bowl. Add and mix the olive oil, lemon juice, honey, garlic, and tahini.


2. Add the onion and mix really well. Add the gold kiwis after.


3. To prepare the cucumber, slice lengthwise and remove the seeds using a small spoon. Cut into long strips and then into cubes. Add to the bowl.


4. Season with salt and pepper, if desired.


5. Add the feta cheese on top and sprinkle with freshly chopped dill.


*Don’t mix the salad not until you are ready to serve, or everything becomes watery. You can put it in the fridge first until it's time to serve.
